Reigning Applesauce and Oats

I'm sorry I have not posted in so long. I have been absent or very busy for the last two months. I have been, more recently, testing different ingredients in my muffin recipe. I was having trouble finding the right combination of ingredients to make the muffins moist and healthful. The reigning recipe had mix of applesauce and oats. The recipe below was my favorite.

Morning Muffins

Ingredients:

1 cup Whole Wheat Flour
1 1/4 cups Oats
1/4 cup Flax seed
1 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Salt
1 tsp Cinnamon
________________________
1 cup Unsweetened Applesauce
1/2 cup Almond Milk (you can use any type of milk)
1/4 cup and 2 tbsp Agave syrup (or 1/2 cup Brown Sugar)
2 tbsp Canola Oil (or grapeseed oil or coconut oil)
1 Large Egg (lightly beaten)
1/2 cup raisins (or shredded coconut)

1. Preheat oven to 400 degrees.
2. Line a 12 cup muffin tin with paper or butter.
3. In large bowl combine dry ingredients and set aside.
4. In medium bowl combine applesauce, milk, syrup, oil and egg and mix well.
5. Combine the two bowls and mix.
6. Fold in raisins.
7. Fill muffin tins 3/4 full.
8. Bake in preheated oven for 16-18 minutes.

Per Muffin: Calories 200, Calories from fat 30 to 50 (depending on chosen ingredients), Sodium 123mg, Fiber 4g, Protein 5.5 g
