Chippy Cookies

I have had several people ask me for my cookie recipe over the last few weeks. The reason, you may ask. I cannot consume sugar with a high glycemic index, so I use a sugar, agave, which is much healthier for you (no spikes in blood sugar level). Also, I can't eat much dairy so I use half to a fourth the butter that you normally use in cookies. Lastly, just because I'm a bit of a health nut, I use flax seed (good for cholesterol levels and cancer fighter) and whole wheat (helps you stay full longer and good for digestion). You’re probably thinking, "That sounds gross!” Well, it's not. Give them a try. If you like them you'll not only enjoy a good cookie, but your body will thank you for consuming a cookie with health benefits.

Chrissie’s Cookies

Ingredients

1/2 to 1 Stick Butter

2 Eggs

1 tsp. Vanilla

2/3 cup Agave Syrup

1/2 cup apple sauce

2 cups Whole Wheat Flour

1/4 cup Flaxseed

1 & 1/2 tsp. Baking Soda

2 tbsp. Cinnamon

1 & 1/2 cups Mini Chocolate Chips

Instructions

1. Preheat oven to 350.

2. Mix butter, agave syrup and eggs until fluffy.

3. Add vanilla, and applesauce. Mix well.

4. Add the rest of the ingredients. Mix well.

5. Spoon large tablespoons of dough, two inches apart, on to cookie sheets.

6. Cook for 8-12 minutes or until done (it's different for each oven).
